- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 can (28 ounces) crushed tomatoes
- 2 tablespoons tomato paste

- 9 lasagna noodles
- 15 ounces ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Stir occasionally to prevent burning.
- Add 2 cloves of minced garlic to the skillet and cook for an additional 1 minute, until fragrant. Be careful not to let the garlic brown, as it can become bitter.
- Increase the heat to medium-high, then add 1 pound of ground beef to the skillet. Cook for about 7-8 minutes, breaking it up with a spatula, until browned and no longer pink. Look for a nice brown color on the meat for depth of flavor.
- Stir in 1 can of crushed tomatoes and 2 tablespoons of tomato paste. Add 1 teaspoon of dried oregano and 1 teaspoon of dried basil. Season with salt and pepper to taste. Simmer for 20 minutes, allowing the flavors to meld. The sauce should thicken slightly.
- While the sauce simmers, cook 9 lasagna noodles according to package instructions until al dente. Drain and set aside on a towel to prevent sticking.
- In a mixing bowl, combine 15 ounces of ricotta cheese with 1 egg, mixing until smooth. This will add richness and help bind the cheese layers.
- Preheat your oven to 375°F (190°C). In a 9×13 inch baking dish, spread a layer of the Bolognese sauce on the bottom to prevent sticking. This should be about 1 cup of sauce.
- Place 3 lasagna noodles on top of the sauce, followed by half of the ricotta mixture, a third of the shredded mozzarella cheese, and another cup of Bolognese sauce. Repeat the layering process, adding another 3 noodles, the remaining ricotta, another cup of mozzarella, and more sauce.
- For the final layer, top with the remaining 3 noodles, the last of the Bolognese sauce, and sprinkle the remaining mozzarella and 1/2 cup of grated Parmesan cheese on top. This creates a beautiful, cheesy crust.
- Cover the dish with aluminum foil (to prevent sticking, spray the underside with cooking spray) and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
- Let the lasagna rest for about 10 minutes before slicing. This helps the layers set and makes for easier serving.
