  • Yield: 4 cups 1x

Description

This vibrant Watermelon Cherry Beet Juice blends the sweetness of watermelon and cherries with earthy beets, creating a refreshing drink perfect for warm days. Enhanced with lime juice and optional honey, it’s a delicious way to hydrate and enjoy fresh produce.

Ingredients

Scale
  • 4 cups of fresh watermelon, cubed
  • 1 cup of fresh cherries, pitted
  • 1 medium beet, peeled and chopped
  • 1 tablespoon of fresh lime juice
  • 1 tablespoon of honey or agave syrup (optional)
  • 1 cup of cold water or coconut water
  • Ice cubes (for serving)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Select Your Produce: Choose ripe watermelon and fresh cherries. Look for a heavy watermelon and shiny cherries without blemishes.
  2. Wash and Cut the Watermelon: Rinse the watermelon, cut it in half, then into quarters, and finally into cubes. Remove any seeds if using a seeded variety.
  3. Prepare the Cherries: Rinse cherries and use a cherry pitter to remove the pits. Alternatively, slice in half and remove pits with a knife.
  4. Peel and Chop the Beet: Wearing gloves, peel the beet and cut it into small chunks.
  5. Juicing Preparation: Gather all prepared ingredients and have your juicer or blender ready. If using a blender, have a fine mesh strainer or cheesecloth on hand.
  6. Juicing with a Juicer: Feed watermelon, cherries, and beet into the juicer, starting with watermelon.
  7. Juicing with a Blender: Add watermelon, cherries, and beet to the blender. Pour in cold water or coconut water and blend until smooth (30-60 seconds).
  8. Straining the Juice: If using a blender, strain the mixture through a fine mesh strainer into a bowl or pitcher, pressing down to extract juice. Discard pulp or save for other uses.
  9. Add Lime Juice and Sweetener: Stir in fresh lime juice and optional honey/agave syrup to taste. Mix well.
  10. Chill the Juice: Refrigerate for 30 minutes or serve immediately over ice.
  11. Garnishing: Pour juice into glasses filled with ice and garnish with fresh mint leaves. Optionally, add a slice of watermelon or a cherry on the rim.
  12. Enjoying Your Juice: Appreciate the vibrant color and sip the refreshing juice, packed with nutrients.

Notes

  • For a sweeter juice, adjust the amount of honey or agave syrup to your taste.
  • This juice is best enjoyed fresh but can be stored in the refrigerator for 24-48 hours.
  • Consider freezing leftover juice in ice cube trays for later use in smoothies or other beverages.
