Instructions
- Gather all your ingredients. Finely chop the onion and set aside. Dice the tomatoes, removing seeds if desired. Dice the green and red bell peppers. If using feta cheese, crumble it and set aside.
- In a large skillet, heat olive oil over medium heat for about a minute. Add the chopped onions and sauté for 3-4 minutes until translucent. Add the diced bell peppers and cook for another 3-4 minutes until softened. Stir in the diced tomatoes and cook for about 5 minutes until they release their juices. Add paprika and ground cumin, season with salt and pepper, and cook for an additional 2 minutes.
- Crack the eggs into a mixing bowl and whisk until well combined. Reduce the heat to low in the skillet with the vegetables. Pour the beaten eggs over the vegetable mixture and gently stir with a spatula, being careful not to over-stir.
- Allow the eggs to cook undisturbed for about 2 minutes. Gently stir again, scraping the bottom of the skillet, and continue to cook for another 2-3 minutes until the eggs are just set but still creamy. If using feta cheese, sprinkle it over the top during the last minute of cooking.
- Remove the skillet from heat once the eggs are cooked to your liking. Transfer to a serving dish or serve directly from the skillet. Garnish with freshly chopped parsley and serve warm with crusty bread or pita.
