Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8×8-inch (20×20 cm) square cake pans, lining the bottoms with parchment paper for easy removal.
  2. In a medium bowl, whisk together 2 ½ cups of all-purpose flour, 1 ½ teaspoons of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt. Set aside.
  3. In a large mixing bowl, cream together 1 cup (2 sticks) of softened unsalted butter and 2 cups of granulated sugar on medium-high speed until light and fluffy, about 3-5 minutes.
  4. Beat in 4 large room-temperature eggs, one at a time, scraping down the sides of the bowl after each addition. Mix in 2 teaspoons of vanilla extract.

Gradually beat in 4 cups of sifted powdered sugar, alternating with 4-6 tablespoons of whole milk (or non-dairy alternative) and 1 teaspoon of vanilla extract, until light and fluffy. Adjust milk quantity for desired consistency.
  9. In a separate bowl, cream ½ cup (1 stick) softened unsalted butter. Gradually beat in 2 cups of sifted powdered sugar and ½ cup of unsweetened cocoa powder, alternating with 2-3 tablespoons of whole milk (or non-dairy alternative) and ½ teaspoon of vanilla extract, until smooth and well combined.
  10. Once the cake layers are completely cool, use a serrated knife to carefully level the tops of each layer, ensuring they are flat for stacking. Place one red cake layer on your serving plate or cake stand. Spread an even layer of white buttercream over it. Top with the white cake layer, then another layer of white buttercream. Finish with the second red cake layer.
  11. Apply a thin layer of white buttercream all over the assembled cake, including the sides and top. Chill the cake in the refrigerator for 20-30 minutes to set the crumb coat.
  12. Once the crumb coat is firm, apply a thicker, smooth layer of white buttercream to the top and sides of the cake.
