- 1 cup sour cream
- 1 cup mayonnaise
- 1 (1 oz) packet ranch dressing mix
- 1 (15 oz) can chili beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (4 oz) can diced green chilies, undrained
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes (fresh or canned, drained)
- 1/2 cup sliced green onions
- 1/2 cup diced bell pepper (any color)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips, for serving
Instructions
- In a large mixing bowl, add the softened cream cheese. Make sure it’s at room temperature for easier mixing.
- Next, add the sour cream and mayonnaise to the bowl. These ingredients will give the dip its creamy texture.
- Sprinkle in the ranch dressing mix. This is where the flavor really starts to kick in!
- Using a hand mixer or a whisk, blend these ingredients together until they are smooth and well combined. You want a creamy consistency without any lumps.
- Gently fold in the drained chili beans and black beans. These will add protein and a nice texture to the dip.
- Next, add the drained corn and the diced green chilies. The corn adds a sweet crunch, while the chilies bring a bit of heat.
- Now, it’s time to add the shredded cheddar cheese. I love using sharp cheddar for a more robust flavor, but feel free to use your favorite cheese.
- Incorporate the diced tomatoes, sliced green onions, and diced bell pepper. These fresh ingredients will add color and freshness to the dip.
- Finally, sprinkle in the garlic powder and cumin. These spices will enhance the overall flavor profile of the dip.
- Season with salt and pepper to taste. I usually start with a pinch of each and adjust as needed.
- Using a spatula, gently fold all the ingredients together until everything is evenly distributed. Be careful not to overmix, as you want to keep some of the texture from the beans and veggies.
- Once everything is combined, taste the dip and adjust the seasoning if necessary. Sometimes a little extra salt or a dash of hot sauce can elevate the flavors even more!
- Transfer the dip to a serving bowl or an airtight container. Cover it with plastic wrap or a lid.
- Place the dip in the refrigerator for at least 1 hour, but if you have time, letting it chill for 2-3 hours or even overnight will enhance the flavors even more.
- Remove the dip from the refrigerator and give it a quick stir to refresh the texture.
- Transfer the dip to a decorative serving dish if you’d like to make it look extra appealing. Serve with tortilla chips.
