Instructions
- Start by gathering all your ingredients. It’s always easier to have everything ready before you begin cooking.
- In a large bowl, combine the diced chicken with the teriyaki sauce, soy sauce, rice vinegar, sesame oil, garlic powder, ginger powder, and black pepper. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 15 minutes, or up to an hour in the fridge for enhanced flavors.
- Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the marinated chicken to the skillet, being careful not to overcrowd the pan. Cook the chicken for about 5-7 minutes, stirring occasionally, until it’s browned and cooked through, reaching an internal temperature of 165°F (75°C).
- Once the chicken is cooked, add the shredded carrots and diced bell peppers to the skillet. Stir everything together and cook for an additional 2-3 minutes until the vegetables are slightly tender but still crisp.
- Remove the skillet from heat and stir in the chopped green onions.
- While the chicken and vegetables are cooling slightly, prepare your lettuce leaves by rinsing them under cold water and patting them dry with a paper towel.
- To assemble the wraps, take a lettuce leaf and spoon a generous amount of the teriyaki chicken mixture into the center, being careful not to overfill.
