  • 4 slices of whole grain bread
  • 1 cup fresh spinach, washed and roughly chopped
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: red pepper flakes for a bit of heat

Instructions

  1. In a medium-sized skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  2. Toss in the chopped spinach and stir in the skillet. Cook for about 2-3 minutes until the spinach is wilted.
  3. Sprinkle a pinch of salt and pepper over the spinach. If desired, add a pinch of red pepper flakes. Stir well to combine and remove the skillet from heat.
  4. In a mixing bowl, combine the sautéed spinach with the crumbled feta cheese and shredded mozzarella cheese. Mix until well combined.
  5. Use whole grain bread for a nutty flavor, or substitute with sourdough or your preferred bread.
  6. Spread the remaining tablespoon of butter evenly on one side of each slice of bread.
  7. On the unbuttered side of two slices, generously spread the spinach and cheese mixture, covering the entire slice.
  8. Place the other two slices of bread on top, buttered side facing out, creating two assembled sandwiches.
  9. In the same skillet, add more olive oil if needed and heat over medium heat.
  10. Carefully place the sandwiches in the skillet. Cook for about 3-4 minutes on one side until golden brown.
  11. Gently flip the sandwiches using a spatula and cook for another 3-4 minutes on the other side. Adjust heat if the bread browns too quickly.
  12. Press down gently on the sandwiches with the spatula to help the cheese melt evenly. Optionally, cover the skillet with a lid for a minute or two.
  13. Once both sides are golden brown and the cheese is melted, remove the sandwiches from the skillet and place them on a cutting board.
  14. Let the sandwiches cool for a minute before slicing in half. Serve warm, optionally with a side of tomato soup or a fresh salad.
