- 1 cup heavy cream

- 1 tablespoon Dijon mustard

- Season the chicken breasts generously with salt and pepper on both sides. Let them sit for about 10-15 minutes to absorb the seasoning.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts, ensuring not to overcrowd the pan. Cook in batches if necessary.
- Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be no longer pink and juices should run clear.
- Remove the chicken from the skillet and place it on a plate. Cover loosely with aluminum foil to keep warm.
- In the same skillet, reduce the heat to medium and add the butter. Allow it to melt and foam.
- Add the sliced mushrooms and sauté for about 5-6 minutes until browned and tender.
- Stir in the minced garlic and sauté for an additional 1-2 minutes, being careful not to burn the garlic.
- Pour in the chicken broth, scraping the bottom of the skillet to deglaze and lift the browned bits.
- Bring the broth to a simmer and cook for about 3-4 minutes to reduce slightly.
- Stir in the heavy cream, dried thyme, dried rosemary, and Dijon mustard. Let it simmer for another 5-7 minutes until the sauce thickens to your desired consistency.
- Return the chicken breasts to the skillet, spooning the sauce over them. Let it simmer for an additional 2-3 minutes to heat through and meld flavors.
- Taste the sauce and adjust seasoning with more salt and pepper if needed.
