  • Author: Lily
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

Enjoy a comforting and creamy skillet chicken with mushroom sauce, featuring perfectly seared chicken breasts enveloped in a rich sauce made from sautéed mushrooms, garlic, and herbs. This dish is ideal for pairing with your favorite sides for a satisfying meal.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 8 ounces mushrooms, sliced (cremini or button mushrooms preferred)
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Dijon mustard
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides. Let them sit for about 10-15 minutes to absorb the seasoning.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts, ensuring not to overcrowd the pan. Cook in batches if necessary.
  3. Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be no longer pink and juices should run clear.
  4. Remove the chicken from the skillet and place it on a plate. Cover loosely with aluminum foil to keep warm.
  5. In the same skillet, reduce the heat to medium and add the butter. Allow it to melt and foam.
  6. Add the sliced mushrooms and sauté for about 5-6 minutes until browned and tender.
  7. Stir in the minced garlic and sauté for an additional 1-2 minutes, being careful not to burn the garlic.
  8. Pour in the chicken broth, scraping the bottom of the skillet to deglaze and lift the browned bits.
  9. Bring the broth to a simmer and cook for about 3-4 minutes to reduce slightly.
  10. Stir in the heavy cream, dried thyme, dried rosemary, and Dijon mustard. Let it simmer for another 5-7 minutes until the sauce thickens to your desired consistency.
  11. Return the chicken breasts to the skillet, spooning the sauce over them. Let it simmer for an additional 2-3 minutes to heat through and meld flavors.
  12. Taste the sauce and adjust seasoning with more salt and pepper if needed.
  13. Serve each chicken breast on a plate, generously ladling the mushroom sauce over the top. Garnish with freshly chopped parsley.
  14. This dish pairs well with mashed potatoes, rice, or a simple green salad.
  15. Enjoy your delicious skillet chicken with mushroom sauce!
