Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef to the pot. Use a wooden spoon to break it apart as it cooks. Continue to cook until it’s browned and no longer pink, approximately 5-7 minutes.
- Toss in the diced carrots and celery, stirring them into the meat mixture. Cook for another 5 minutes until they start to soften.
- Add the rice to the pot, mixing it well with the meat and vegetables to toast the rice slightly.
- Slowly add the beef broth, ensuring to scrape the bottom of the pot to incorporate any delicious browned bits. Bring the mixture to a boil.
- Add in your spices—bay leaves, salt, pepper, and paprika. Adjust to taste based on your preference.
- Once boiling, reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the rice is tender and the flavors meld together.
- Remove the bay leaves from the pot and taste the soup, adjusting any seasonings as needed. If desired, stir in some chopped fresh parsley or thyme.
- Ladle the soup into bowls and enjoy it warm, perhaps with a slice of crusty bread on the side!
