  • 2 medium-sized butternut squashes
  • 1 pound of Italian sausage
  • 1 cup of cooked quinoa
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of spinach, chopped
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup of shredded mozzarella cheese
  • 2 tablespoons of olive oil
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the butternut squashes in half lengthwise and scoop out the seeds and stringy bits.
  3. Drizzle the insides with olive oil and sprinkle with salt and pepper. Place cut-side down on a baking sheet lined with parchment paper.
  4. Roast for 30-35 minutes, or until tender.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the chopped onion for 3-4 minutes until translucent.
  6. Add minced garlic and cook for an additional minute.
  7. Add the Italian sausage, breaking it up as it cooks until browned (about 5-7 minutes).
  8. Stir in cooked quinoa (or rice), chopped spinach, oregano, thyme, and red pepper flakes. Cook for another 2-3 minutes until spinach is wilted.
  9. Remove from heat and stir in shredded mozzarella cheese. Season with salt and pepper to taste.
  10. Flip the roasted squash halves cut side up.
  11. Spoon the sausage and quinoa mixture into each squash half, packing it in slightly.
  12. If there’s leftover stuffing, place it in a small baking dish.
  13. Sprinkle additional mozzarella cheese on top of each stuffed squash half.
  14. Return to the oven and bake for 15-20 minutes, until cheese is melted and bubbly.
  15. Let cool for a few minutes before serving.
  16. Garnish with freshly chopped parsley and drizzle with balsamic glaze if desired.
