- 2 medium-sized butternut squashes
- 1 pound of Italian sausage
- 1 cup of cooked quinoa
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of spinach, chopped
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1/2 teaspoon of red pepper flakes (optional)
- Salt and pepper to taste
- 1/2 cup of shredded mozzarella cheese
- 2 tablespoons of olive oil
- Fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the butternut squashes in half lengthwise and scoop out the seeds and stringy bits.
- Drizzle the insides with olive oil and sprinkle with salt and pepper. Place cut-side down on a baking sheet lined with parchment paper.
- Roast for 30-35 minutes, or until tender.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the chopped onion for 3-4 minutes until translucent.
- Add minced garlic and cook for an additional minute.
- Add the Italian sausage, breaking it up as it cooks until browned (about 5-7 minutes).
- Stir in cooked quinoa (or rice), chopped spinach, oregano, thyme, and red pepper flakes. Cook for another 2-3 minutes until spinach is wilted.
- Remove from heat and stir in shredded mozzarella cheese. Season with salt and pepper to taste.
- Flip the roasted squash halves cut side up.
- Spoon the sausage and quinoa mixture into each squash half, packing it in slightly.
- If there’s leftover stuffing, place it in a small baking dish.
- Sprinkle additional mozzarella cheese on top of each stuffed squash half.
- Return to the oven and bake for 15-20 minutes, until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
- Garnish with freshly chopped parsley and drizzle with balsamic glaze if desired.
- Enjoy as a main dish or hearty side!
