  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheese
  • 1/4 cup chopped green onions (optional)
  • 6 large flour tortillas (10-inch size)
  • Butter or oil for cooking
  • Hot sauce or salsa for serving (optional)

Instructions

  1. In a large mixing bowl, crack the 6 large eggs.
  2. Add in the 1/4 cup of milk.
  3. Sprinkle in the 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  4. Using a whisk or a fork, beat the eggs and milk together until well combined and slightly frothy (about 1-2 minutes).
  5. In a large skillet, heat a little butter or oil over medium heat.
  6. Add the crumbled sausage to the skillet.
  7. Cook the sausage for about 5-7 minutes, stirring occasionally, until browned and cooked through.
  8. Remove the sausage from the skillet and set aside on a plate lined with paper towels.
  9. In the same skillet, pour in the egg mixture.
  10. Cook the eggs over medium-low heat, gently stirring with a spatula.
  11. As the eggs begin to set, add the cooked sausage back into the skillet along with the shredded cheese and optional green onions.
  12. Continue to cook, stirring gently, until the eggs are fully cooked and the cheese is melted (about 3-5 minutes).
  13. Take a large flour tortilla and lay it flat on a clean surface.
  14. Scoop a generous amount of the egg and sausage mixture onto the center of the tortilla.
  15. Fold the sides of the tortilla inwards over the filling, then roll it up from the bottom to the top, tucking it in as you go.
  16. Repeat with the remaining tortillas and filling to make about 6 roll-ups.
  17. Wipe out the skillet and add a little more butter or oil over medium heat.
  18. Place the roll-ups seam side down in the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
  19. Serve warm with hot sauce or salsa if desired.

  • Feel free to customize the filling with your favorite ingredients, such as bell peppers, mushrooms, or spinach.
