These Breakfast Sausage and Egg Roll-Ups are a hearty and delicious way to kickstart your day. Filled with fluffy scrambled eggs, savory sausage, and melted cheese, all wrapped in a warm tortilla, they make for a perfect breakfast on the go or a cozy brunch at home.

- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked sausage, crumbled
- 1 cup shredded cheese
- 1/4 cup chopped green onions (optional)
- 6 large flour tortillas (10-inch size)
- Butter or oil for cooking
- Hot sauce or salsa for serving (optional)
Instructions
- In a large mixing bowl, crack the 6 large eggs.
- Add in the 1/4 cup of milk.
- Sprinkle in the 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Using a whisk or a fork, beat the eggs and milk together until well combined and slightly frothy (about 1-2 minutes).
- In a large skillet, heat a little butter or oil over medium heat.
- Add the crumbled sausage to the skillet.
- Cook the sausage for about 5-7 minutes, stirring occasionally, until browned and cooked through.
- Remove the sausage from the skillet and set aside on a plate lined with paper towels.
- In the same skillet, pour in the egg mixture.
- Cook the eggs over medium-low heat, gently stirring with a spatula.
- As the eggs begin to set, add the cooked sausage back into the skillet along with the shredded cheese and optional green onions.
- Continue to cook, stirring gently, until the eggs are fully cooked and the cheese is melted (about 3-5 minutes).
- Take a large flour tortilla and lay it flat on a clean surface.
- Scoop a generous amount of the egg and sausage mixture onto the center of the tortilla.
- Fold the sides of the tortilla inwards over the filling, then roll it up from the bottom to the top, tucking it in as you go.
- Repeat with the remaining tortillas and filling to make about 6 roll-ups.
- Wipe out the skillet and add a little more butter or oil over medium heat.
- Place the roll-ups seam side down in the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
- Serve warm with hot sauce or salsa if desired.
Notes
- Feel free to customize the filling with your favorite ingredients, such as bell peppers, mushrooms, or spinach.
- These roll-ups can be made ahead of time and reheated for a quick breakfast option.
