This Pomegranate Pistachio Whipped Feta is a creamy and tangy dip that blends feta and cream cheese with crunchy pistachios and juicy pomegranate seeds. It’s a visually stunning and addictive appetizer, perfect for parties or as a tasty snack.

- 8 oz (225g) feta cheese, crumbled
- 4 oz (115g) cream cheese, softened
- 1/4 cup (60ml) Greek yogurt
- 1/4 cup (60ml) extra virgin olive oil
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup pomegranate seeds
- 1/2 cup pistachios, shelled and roughly chopped
- Fresh mint leaves, for garnish (optional)
- Crackers or bread, for serving
Instructions
- In a medium mixing bowl, combine the crumbled feta cheese and softened cream cheese. Using a hand mixer or a stand mixer fitted with a paddle attachment, beat the cheeses together on medium speed until they are well combined and creamy (about 2-3 minutes).
- Add the Greek yogurt, olive oil, honey, lemon juice, and garlic powder to the bowl. Continue mixing on medium speed until everything is smooth and fluffy (another 2-3 minutes).
- Taste the mixture and season with salt and pepper according to your preference.
- Gently fold in the pomegranate seeds and chopped pistachios into the whipped feta mixture using a spatula. Be careful not to overmix.
- Transfer the whipped feta mixture to a serving bowl and smooth the top or create a decorative swirl.
- Garnish with extra pomegranate seeds and chopped pistachios on top.
- Optionally, add fresh mint leaves for a pop of color and aroma.
- Drizzle a little extra virgin olive oil over the top.
- Serve with an assortment of crackers, toasted bread, or fresh vegetable sticks.
- Transfer any remaining whipped feta into an airtight container, pressing plastic wrap directly onto the surface before sealing.
- Store in the refrigerator for up to 3-4 days. Stir before serving again to restore creaminess.
