  • 8 oz (225g) feta cheese, crumbled
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (60ml) Greek yogurt
  • 1/4 cup (60ml) extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup pomegranate seeds
  • 1/2 cup pistachios, shelled and roughly chopped
  • Fresh mint leaves, for garnish (optional)
  • Crackers or bread, for serving

Instructions

  1. In a medium mixing bowl, combine the crumbled feta cheese and softened cream cheese. Using a hand mixer or a stand mixer fitted with a paddle attachment, beat the cheeses together on medium speed until they are well combined and creamy (about 2-3 minutes).
  2. Add the Greek yogurt, olive oil, honey, lemon juice, and garlic powder to the bowl. Continue mixing on medium speed until everything is smooth and fluffy (another 2-3 minutes).
  3. Taste the mixture and season with salt and pepper according to your preference.
  4. Gently fold in the pomegranate seeds and chopped pistachios into the whipped feta mixture using a spatula. Be careful not to overmix.
  5. Transfer the whipped feta mixture to a serving bowl and smooth the top or create a decorative swirl.
  6. Garnish with extra pomegranate seeds and chopped pistachios on top.
  7. Optionally, add fresh mint leaves for a pop of color and aroma.
  8. Drizzle a little extra virgin olive oil over the top.
  9. Serve with an assortment of crackers, toasted bread, or fresh vegetable sticks.
  10. Transfer any remaining whipped feta into an airtight container, pressing plastic wrap directly onto the surface before sealing.
  11. Store in the refrigerator for up to 3-4 days. Stir before serving again to restore creaminess.
