Ingredients
Scale
- 4 ripe peaches, sliced
- 8 ounces of fresh burrata cheese
- 4 cups of arugula or mixed greens
- 1/4 cup of toasted walnuts or pecans
- 1/4 cup of crumbled feta cheese (optional)
- 1/4 cup of balsamic glaze
- 2 tablespoons of extra virgin olive oil
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Wash the Peaches: Rinse the peaches under cool running water and pat them dry with a clean kitchen towel.
- Slice the Peaches: Cut the peaches in half, remove the pit, and slice each half into wedges (about 8 slices per peach).
- Prepare the Greens: In a large bowl, add the arugula or mixed greens. Wash and dry thoroughly if using mixed greens.
- Toast the Nuts: In a small skillet over medium heat, toast the walnuts or pecans for 5-7 minutes, stirring frequently until golden brown. Let cool.
- Prepare the Burrata: Remove the burrata cheese from its packaging and let it sit at room temperature for about 15 minutes before serving.
- Layer the Greens: Place a generous handful of arugula or mixed greens on a large serving platter or individual bowls.
- Add the Peaches: Arrange the sliced peaches on top of the greens, fanning them out for presentation.
- Add the Burrata: Tear the burrata into pieces and place them over the salad, ensuring the creamy interior is visible.
- Sprinkle the Nuts: Distribute the toasted walnuts or pecans evenly over the salad.
- Add Feta (Optional): Crumble feta cheese over the top if desired.
- Drizzle with Olive Oil: Drizzle extra virgin olive oil over the salad.
- Add Balsamic Glaze: Drizzle balsamic glaze over the salad to enhance the flavors.
- Season: Sprinkle salt and freshly ground black pepper to taste.
- Garnish: Add fresh basil leaves for color and flavor.
- Serve Immediately: Enjoy the salad fresh to maintain the creaminess of the burrata and crispness of the greens.
Notes
- Pairing Suggestions: This salad pairs well with grilled chicken or fish, making it a complete meal.
- Storing Leftovers: Store any leftovers in an airtight container in the refrigerator, but note that the greens may wilt and the burrata will lose its creamy texture.
