  • 1 large egg

  • 1/2 cup chopped walnuts or pecans (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground ginger, and ground cinnamon until well combined.
  3. In a large bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer on medium speed for about 2-3 minutes until light and fluffy.
  4. Add the honey to the creamed mixture and mix until fully incorporated.
  5. Crack in the egg and mix until combined.
  6. Add the buttermilk, orange zest, orange juice, and grated fresh ginger, mixing until just combined.
  7. Gradually fold the dry ingredients into the wet mixture using a spatula, mixing until just combined after each addition. If using nuts, fold in the chopped walnuts or pecans at this point.
  8. Prepare a muffin tin by greasing it with cooking spray or lining it with paper liners.
  9. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  10. Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove the muffin tin from the oven and let it cool for about 5 minutes before transferring the cakes to a wire rack to cool completely.
  12. Once cooled, dust the tops with powdered sugar for a beautiful presentation.
