  • 1 cup fresh fruit (strawberries, blueberries, or peaches), chopped

Instructions

  1. In a medium mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Stir until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan. Make sure to pack it tightly and evenly to create a solid base for your cheesecake.
  3. Once the crust is evenly pressed, place the pan in the refrigerator to chill while you prepare the cheesecake filling.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy (about 2-3 minutes).
  5. Gradually add the powdered sugar and continue to beat until fully incorporated and there are no lumps. Scrape down the sides of the bowl as needed.
  6. Add the vanilla extract and mix until combined.
  7. In a separate bowl, whip the heavy cream until stiff peaks form (about 3-5 minutes on high speed).
  8. Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate the whipped cream.
  9. Once fully incorporated, gently fold in the chopped fresh fruit.
  10. Remove the crust from the refrigerator and spoon the cheesecake filling over it, spreading it evenly with a spatula.
  11. Smooth the top with the spatula, creating a decorative swirl if desired.
  12. Cover with plastic wrap or aluminum foil and return to the refrigerator. Chill for at least 4 hours, preferably overnight.
  13. While the cheesecake is chilling, wash and slice any additional fresh fruit for garnish.
  14. Optionally, prepare a fruit glaze by heating 1 cup of fruit preserves in a small saucepan over low heat until melted. Allow it to cool slightly before using it as a drizzle over the cheesecake.
  15. Once set, carefully remove the sides of the springform pan. Run a knife around the edge if needed.
  16. Transfer to a serving platter. If using a pie dish, slice into wedges while still in the dish.
  17. Top with the prepared fresh fruit, arranging it decoratively or scattering it casually.
  18. Drizzle with fruit glaze if made, and garnish with fresh mint leaves for added color.
