  • 1 large round loaf of Italian bread or muffuletta bread
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup green olives, pitted and chopped
  • 1 cup black olives, pitted and chopped
  • 1/2 cup pickled vegetables (like giardiniera), chopped
  • 1/2 pound mortadella, sliced
  • 1/2 pound salami, sliced
  • 1/2 pound ham, sliced
  • 1/2 pound provolone cheese, sliced
  • 1/2 pound mozzarella cheese, sliced

Instructions

  1. In a medium bowl, combine the chopped green olives, black olives, and pickled vegetables.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, and crushed red pepper flakes (if using).
  3. Pour the dressing over the olive mixture and stir well to combine. Make sure all the ingredients are evenly coated.
  4. Cover the bowl with plastic wrap and let it sit in the refrigerator for at least 30 minutes.
  5. Take your large round loaf of Italian or muffuletta bread and place it on a cutting board.
  6. Using a serrated knife, carefully slice the bread in half horizontally, keeping the top and bottom intact.
  7. Optionally, scoop out some of the soft bread from the inside to create more space for the fillings.
  8. Spread a generous amount of the olive salad on the bottom half of the bread.
  9. Layer the sliced mortadella, salami, ham, provolone cheese, and mozzarella cheese on top.
  10. Add another layer of the olive salad on top of the cheese.
  11. Place the top half of the bread on the sandwich and press down gently.
  12. Wrap the assembled sandwich tightly in plastic wrap or parchment paper.
  13. Place a heavy skillet or cast-iron pan on top of the wrapped sandwich.
  14. Let the sandwich sit for at least 1 hour at room temperature, or refrigerate for a few hours or overnight.
  15. Remove the sandwich from the wrap and place it on a cutting board.
  16. Using a sharp serrated knife, slice the sandwich into wedges or halves.
