Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, Dutch-processed cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar using an electric mixer until light and fluffy.
  4. Add one large egg at a time, beating well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredient mixture to the wet ingredients while mixing on low speed until just combined.
  6. Gently fold in the semi-sweet chocolate chips with a spatula.
  7. Scoop about 1.5 to 2 tablespoons of cookie dough, flatten it slightly, place one mini marshmallow in the center, and wrap the dough around the marshmallow to seal it completely.
  8. Place the dough balls about 2 inches apart on the prepared baking sheets and bake for 9-11 minutes until the edges are set but the centers are slightly soft.
