Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cut the carrots into 1-inch pieces.
- Rinse fresh cranberries under cold water and remove any soft or blemished ones. If using frozen cranberries, no need to thaw.
- In a large mixing bowl, combine the carrots and cranberries.
- Drizzle in the maple syrup and olive oil.
- Add the ground cinnamon, salt, and black pepper.
- Optionally, add balsamic vinegar for a tangy twist.
- Toss everything together until well coated.
- Spread the mixture evenly on a large baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
