  • 1 tablespoon olive oil
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • 1 tablespoon apple cider vinegar
  • Optional: Fresh herbs for garnish (like parsley or thyme)

Instructions

  1. In a medium-sized bowl, combine the maple syrup, soy sauce, Dijon mustard, minced garlic, black pepper, salt, olive oil, rosemary, thyme, and apple cider vinegar. Whisk until well blended. Adjust seasoning to taste.
  2. Place the pork tenderloin in a resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4 to 6 hours or overnight.
  3. Preheat your oven to 400°F (200°C). Remove the pork from the marinade, letting excess drip off. Discard the leftover marinade and pat the pork dry with paper towels.
  4. In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Sear the pork for about 3-4 minutes on each side until golden-brown. Remove from heat.
  5. Brush a generous amount of reserved marinade over the seared pork. Place the skillet in the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Baste halfway through with pan juices.
  6. Once cooked, remove the pork from the oven and let it rest for about 10 minutes, covered loosely with aluminum foil. Slice into medallions about 1/2 inch thick.
