Ingredients
Scale
- 1/2 cup unsalted butter (1 stick)
- 1 cup granulated sugar
- 1 cup milk
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest (from about 1 lemon)
- 1/2 teaspoon vanilla extract
- 1 cup lemon-lime soda (like Sprite or 7-Up)
- Powdered sugar for dusting (optional)
- Fresh berries for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium-sized saucepan, melt the butter over low heat. Once melted, remove it from the heat and let it cool slightly.
- In a large mixing bowl, combine the granulated sugar, milk, flour, baking powder, and salt. Whisk until smooth, allowing for a few small lumps.
- Add the melted butter, lemon juice, lemon zest, and vanilla extract to the batter mixture. Stir until well combined; the batter will be thick.
- Pour the batter into a 9×13-inch baking dish without spreading it out.
- Pour the lemon-lime soda evenly over the batter without stirring.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Enjoy the lemon aroma filling your kitchen as it bakes!
- Once baked, let the cobbler cool for 10-15 minutes to set.
- Dust with powdered sugar if desired, using a fine mesh sieve.
- Scoop portions into bowls, noting the contrasting textures of the cake-like bottom and fluffy top.
- Serve with whipped cream or vanilla ice cream, and garnish with fresh berries for an extra touch.
- Allow any leftovers to cool completely before covering with plastic wrap or transferring to an airtight container.
- Store in the refrigerator for up to 3 days. Reheat individual portions in the microwave for 20-30 seconds, or enjoy cold for a refreshing treat.
Notes
- For a more intense lemon flavor, consider adding more lemon zest or juice.
- This cobbler is best enjoyed fresh but can be stored in the fridge for a few days.
