Perfect for quick weeknight dinners or special occasions, it’s easy to prepare and pairs well with various sides. Enjoy a delicious meal in just 30 minutes!

Ingredients

Scale
  • 2 sea bass fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste
  • 1 lemon, sliced (for serving)

Instructions

  1. In a small bowl, combine minced garlic, lemon zest, lemon juice, olive oil, thyme, salt, and pepper. Whisk until well combined.
  2. Place the sea bass fillets in a shallow dish or resealable plastic bag. Pour the marinade over the fish, ensuring each fillet is well coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  3. While the fish is marinating, prepare your cooking area. Use a non-stick skillet over medium heat or preheat a grill to medium-high heat.
  4. Once the skillet is hot, add a drizzle of olive oil. Remove the sea bass from the marinade, letting excess drip off, and place fillets skin-side down in the skillet or on the grill.
  5. Cook for about 4-5 minutes on the first side until golden brown and the fish releases easily. Flip gently and cook for an additional 3-4 minutes until opaque and flaky (internal temperature should reach 145°F/63°C).
  6. Remove the cooked sea bass from the skillet or grill and place on a serving platter. Drizzle with any remaining marinade and garnish with chopped parsley and lemon slices.
  7. Serve with roasted vegetables, a light salad, or over quinoa or rice. Pair with a glass of white wine for an elevated meal.

Notes

  • Choose fresh sea bass fillets for the best flavor and texture.
  • If using frozen fish, ensure it is fully thawed before marinating.
  • Avoid overcrowding the pan or grill; cook in batches if necessary.
  • Feel free to customize the marinade with spices or herbs to suit your taste.
