- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Wait until the oil shimmers, indicating it’s hot enough for cooking.
- Add the 1 lb of sliced chicken breast to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Look for a golden-brown exterior and ensure there are no pink bits remaining.
- Once the chicken is cooked, add 2 cloves of minced garlic and 1 tablespoon of minced ginger. Sauté for 1 minute until fragrant, stirring continuously to prevent burning.
- Add the sliced bell pepper and onion to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp. They should have a vibrant color and slight bite when done, so avoid overcooking them.
- In a small bowl, mix together 3 tablespoons of gochujang, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of honey. Whisk until well combined.
- Pour the sauce over the chicken and vegetables in the skillet. Stir well to coat everything evenly. You’ll notice the sauce thickening as you cook.
- Cook for an additional 2-3 minutes, stirring frequently, until the sauce clings to the chicken and vegetables. It should appear glossy and thick.
- Remove from heat and garnish with sesame seeds and chopped green onions before serving. This adds a nice crunch and fresh flavor to the dish.
