  • 4 slices of sourdough bread
  • 4 ounces of sharp cheddar cheese, sliced
  • 2 ripe peaches, sliced
  • 2 tablespoons of honey
  • 2 tablespoons of unsalted butter, softened
  • 1 tablespoon of fresh thyme leaves (optional)
  • Salt and pepper to taste

Instructions

  1. Choose ripe peaches that are slightly soft to the touch. Wash them thoroughly.
  2. Cut the peaches in half, remove the pit, and slice into 1/4-inch thick wedges.
  3. Slice the sharp cheddar cheese into even slices.
  4. In a small bowl, combine honey with fresh thyme leaves (if using) and stir until well mixed.
  5. Spread softened butter evenly on one side of each slice of sourdough bread.
  6. On the unbuttered side of two slices, layer a slice of cheddar cheese, a few slices of peach, a teaspoon of honey-thyme mixture, a sprinkle of salt and pepper, another slice of cheddar cheese, and top with the other slices of bread, buttered side facing out.
  7. Heat a non-stick skillet or griddle over medium heat.
  8. Place the sandwiches in the skillet and cook for 3-4 minutes until golden brown.
  9. Carefully flip the sandwiches and cover with a lid if needed to help the cheese melt.
  10. Grill for another 3-4 minutes until golden and cheese is melted.
  11. Remove from skillet and let rest for a minute before slicing.
  12. Cut each sandwich in half diagonally.
  13. Drizzle extra honey or sprinkle thyme leaves for presentation.
  14. Enjoy the sandwiches warm, paired with a salad or soup.
