- 4 slices of sourdough bread
- 4 ounces of sharp cheddar cheese, sliced
- 2 ripe peaches, sliced
- 2 tablespoons of honey
- 2 tablespoons of unsalted butter, softened
- 1 tablespoon of fresh thyme leaves (optional)
- Salt and pepper to taste
Instructions
- Choose ripe peaches that are slightly soft to the touch. Wash them thoroughly.
- Cut the peaches in half, remove the pit, and slice into 1/4-inch thick wedges.
- Slice the sharp cheddar cheese into even slices.
- In a small bowl, combine honey with fresh thyme leaves (if using) and stir until well mixed.
- Spread softened butter evenly on one side of each slice of sourdough bread.
- On the unbuttered side of two slices, layer a slice of cheddar cheese, a few slices of peach, a teaspoon of honey-thyme mixture, a sprinkle of salt and pepper, another slice of cheddar cheese, and top with the other slices of bread, buttered side facing out.
- Heat a non-stick skillet or griddle over medium heat.
- Place the sandwiches in the skillet and cook for 3-4 minutes until golden brown.
- Carefully flip the sandwiches and cover with a lid if needed to help the cheese melt.
- Grill for another 3-4 minutes until golden and cheese is melted.
- Remove from skillet and let rest for a minute before slicing.
- Cut each sandwich in half diagonally.
- Drizzle extra honey or sprinkle thyme leaves for presentation.
- Enjoy the sandwiches warm, paired with a salad or soup.
