- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup quinoa, rinsed
- 2 cups vegetable or chicken broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup Kalamata olives, pitted and halved
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 1/4 cup tzatziki sauce (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine chicken breasts with olive oil, oregano, garlic powder, salt, and pepper. Mix until well coated.
- Place the seasoned chicken on a parchment-lined baking sheet.
- Bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C). Check at 20 minutes to avoid overcooking.
- Remove from the oven and let rest for 5 minutes before slicing into bite-sized pieces.
- In a medium saucepan, combine rinsed quinoa and broth.
- Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes.
- Remove from heat and let sit, covered, for another 5 minutes. Fluff with a fork and set aside.
- In a large mixing bowl, add halved cherry tomatoes.
- Dice cucumber and red bell pepper, and finely chop red onion. Add to the bowl with tomatoes.
- Stir in Kalamata olives and crumbled feta cheese.
- Add chopped parsley and squeeze lemon juice over the mixture. Toss gently to combine.
- In each bowl, place a generous scoop of quinoa at the bottom.
- Top with sliced chicken, arranging it nicely.
- Spoon the vegetable and feta mixture over the chicken.
- Drizzle with tzatziki sauce if desired.
- Garnish with additional parsley or olives if you like.
