Instructions

  1. Start by patting the salmon fillets dry with paper towels. Season both sides generously with salt and pepper. Let them sit at room temperature for about 15 minutes to ensure even cooking.
  2. Preheat your grill or grill pan over medium-high heat. Place the salmon fillets skin-side down on the grill. Grill for about 5-6 minutes without moving them. Gently flip the fillets using a spatula and grill for another 3-4 minutes until the fish is cooked through and flakes easily with a fork. Remove from the grill and cover to keep warm.
  3. In a skillet, melt 2 tablespoons of butter over medium heat. Add the finely chopped shallots and sauté until they are translucent, about 2-3 minutes. Be careful not to let them brown. If using white wine, pour it in to deglaze the pan, scraping the bottom to release any flavorful bits. Allow the wine to reduce by half, or use your chosen non-alcoholic substitute in the same way.
  4. Once the liquid has reduced, lower the heat and stir in another tablespoon of butter. Mix well until the sauce is slightly thickened. Season with salt and pepper to taste.
