This Grilled Nectarine Salad combines sweet grilled nectarines with mixed greens, creamy feta, and crunchy nuts, all drizzled with a tangy balsamic dressing. It’s a refreshing dish perfect for a light lunch or as a side.

- 4 ripe nectarines, halved and pitted
- 2 tablespoons olive oil (divided)
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and pepper, to taste
- 4 cups mixed greens (arugula, spinach, and baby kale work well)
- 1/2 cup crumbled feta cheese
- 1/4 cup toasted walnuts or pecans
- Fresh basil leaves, for garnish
Instructions
- Wash the nectarines thoroughly under cool running water.
- Place the nectarines on a cutting board, cut each in half, and remove the pit. Brush the cut sides with a little olive oil.
- In a small bowl, combine 2 tablespoons of olive oil, balsamic vinegar, and honey. Whisk until smooth and emulsified. Season with salt and pepper to taste.
- Preheat your grill to medium-high heat.
- Grill the nectarines cut-side down for 3-4 minutes until grill marks appear. Flip and grill for an additional 2-3 minutes on the skin side.
- In a large salad bowl, add the mixed greens.
- Once the nectarines are grilled, let them cool for a minute, then slice each half into wedges.
- Add the grilled nectarine wedges to the mixed greens.
- Drizzle the dressing over the salad and toss gently to combine.
- Sprinkle crumbled feta cheese and toasted walnuts or pecans on top.
- Tear fresh basil leaves and sprinkle over the salad.
- Toss gently to incorporate the basil.
- Serve immediately while the nectarines are warm.
