Ingredients

  • 4 ripe nectarines, halved and pitted
  • 2 tablespoons olive oil (divided)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper, to taste
  • 4 cups mixed greens (arugula, spinach, and baby kale work well)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted walnuts or pecans
  • Fresh basil leaves, for garnish

Instructions

  1. Wash the nectarines thoroughly under cool running water.
  2. Place the nectarines on a cutting board, cut each in half, and remove the pit. Brush the cut sides with a little olive oil.
  3. In a small bowl, combine 2 tablespoons of olive oil, balsamic vinegar, and honey. Whisk until smooth and emulsified. Season with salt and pepper to taste.
  4. Preheat your grill to medium-high heat.
  5. Grill the nectarines cut-side down for 3-4 minutes until grill marks appear. Flip and grill for an additional 2-3 minutes on the skin side.
  6. In a large salad bowl, add the mixed greens.
  7. Once the nectarines are grilled, let them cool for a minute, then slice each half into wedges.
  8. Add the grilled nectarine wedges to the mixed greens.
  9. Drizzle the dressing over the salad and toss gently to combine.
  10. Sprinkle crumbled feta cheese and toasted walnuts or pecans on top.
  11. Tear fresh basil leaves and sprinkle over the salad.
  12. Toss gently to incorporate the basil.
  13. Serve immediately while the nectarines are warm.
