  • Author: Clara
  • Total Time: 40-45 minutes
  • Yield: 4-6 skewers 1x

Description

Grilled Halloumi Skewers are a vibrant and flavorful dish featuring marinated halloumi cheese and fresh vegetables, perfect for summer gatherings or a light meal. Easy to prepare and deliciously grilled, these skewers make a delightful appetizer or side dish.

Ingredients

Scale
  • 1 block (about 250g) of halloumi cheese
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 1 red onion
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1 teaspoon of dried oregano
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Slice the halloumi cheese into 1-inch cubes.
  2. Wash and chop the red and yellow bell peppers into cubes. Slice the zucchini into ½ inch rounds. Peel and cut the red onion into quarters, separating the layers.
  3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper.
  4. In a large bowl, combine halloumi cubes and chopped vegetables. Pour the marinade over and toss gently. Let sit for 15-20 minutes.
  5. If using wooden skewers, soak them in water for at least 30 minutes. Metal skewers can be used directly.
  6. Thread the marinated halloumi and vegetables onto the skewers, alternating for a colorful presentation. Aim for 3-4 pieces of halloumi and a mix of vegetables per skewer.
  7. Continue until all ingredients are used, yielding about 4-6 skewers.
  8. Heat your grill to medium-high. If using a grill pan, place it on the stove over medium-high heat.
  9. Brush the grill grates with olive oil to prevent sticking.
  10. Place skewers on the grill and cook for 3-4 minutes on each side, turning occasionally for even cooking. Halloumi should be golden brown and crispy, while vegetables should be tender.
  11. After 10-12 minutes, ensure halloumi is firm yet slightly soft, and vegetables are cooked but still crunchy.
  12. Carefully take skewers off the grill using tongs.
  13. Optionally sprinkle fresh herbs like parsley or cilantro and a squeeze of lemon juice before serving.
  14. Arrange skewers on a platter. Serve as an appetizer, side dish, or light main course, pairing with tzatziki sauce or a fresh salad.

Notes

  • Experiment with Vegetables: Feel free to add cherry tomatoes, mushrooms, or eggplant for variety.
  • Add Spices: Consider adding your favorite spices to the marinade for extra flavor.
