- 1 block (about 250g) of halloumi cheese
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 red onion
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 1 teaspoon of dried oregano
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Slice the halloumi cheese into 1-inch cubes.
- Wash and chop the red and yellow bell peppers into cubes. Slice the zucchini into ½ inch rounds. Peel and cut the red onion into quarters, separating the layers.
- In a small bowl, whisk together olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper.
- In a large bowl, combine halloumi cubes and chopped vegetables. Pour the marinade over and toss gently. Let sit for 15-20 minutes.
- If using wooden skewers, soak them in water for at least 30 minutes. Metal skewers can be used directly.
- Thread the marinated halloumi and vegetables onto the skewers, alternating for a colorful presentation. Aim for 3-4 pieces of halloumi and a mix of vegetables per skewer.
- Continue until all ingredients are used, yielding about 4-6 skewers.
- Heat your grill to medium-high. If using a grill pan, place it on the stove over medium-high heat.
- Brush the grill grates with olive oil to prevent sticking.
- Place skewers on the grill and cook for 3-4 minutes on each side, turning occasionally for even cooking. Halloumi should be golden brown and crispy, while vegetables should be tender.
- After 10-12 minutes, ensure halloumi is firm yet slightly soft, and vegetables are cooked but still crunchy.
- Carefully take skewers off the grill using tongs.
- Optionally sprinkle fresh herbs like parsley or cilantro and a squeeze of lemon juice before serving.
- Arrange skewers on a platter. Serve as an appetizer, side dish, or light main course, pairing with tzatziki sauce or a fresh salad.
