  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon white wine vinegar

Instructions

  1. Rinse the cod fillets under cold water and pat them dry with paper towels.
  2. In a small bowl, mix together the olive oil, garlic powder, paprika, salt, and pepper.
  3. Brush the marinade generously over both sides of the cod fillets.
  4. Let the fillets sit at room temperature for about 15-20 minutes.
  5. In a medium bowl, combine the Greek yogurt, lemon zest, lemon juice, chopped dill, Dijon mustard, honey, and white wine vinegar.
  6. Whisk the ingredients together until smooth and well combined.
  7. Taste the sauce and adjust the seasoning if necessary.
  8. Cover the bowl with plastic wrap and refrigerate the sauce for at least 30 minutes.
  9. Preheat your grill to medium-high heat.
  10. Lightly oil the grates to prevent sticking.
  11. Carefully place the cod fillets on the grill, leaving space between each piece.
  12. Grill the cod for about 4-5 minutes on one side without moving it.
  13. Gently flip the fillets over and grill for an additional 4-5 minutes.
  14. Remove the cod from the grill and let it rest for a couple of minutes.
  15. Arrange the grilled cod fillets on a serving platter.
  16. Drizzle the chilled dill sauce generously over the top of the fish.
  17. Garnish with additional fresh dill or lemon wedges if desired.
  18. Serve immediately while warm, paired with roasted vegetables, a fresh salad, or fluffy rice.
