- 1 pound ground chicken
- 1/2 cup breadcrumbs (preferably whole wheat)
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons olive oil (for cooking)
- 1 cup tzatziki sauce (for serving)
- Pita bread or lettuce wraps (for serving)
- Optional: sliced cucumbers, tomatoes, and red onion (for garnish)
Instructions
- In a large mixing bowl, combine the ground chicken, breadcrumbs, and grated Parmesan cheese. Use your hands to mix evenly.
- Add the finely chopped parsley, minced garlic, dried oregano, dried thyme, salt, and black pepper. Mix until well combined.
- Crack the egg into the mixture and mix again until fully incorporated. The mixture should be sticky but manageable.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- After chilling, take the mixture out and portion out meatballs (about 1.5 inches in diameter). Roll them tightly but not too tightly and place on a parchment-lined baking sheet.
- Preheat your oven to 400°F (200°C) if baking.
- In a large skillet, heat olive oil over medium heat. Add meatballs in batches, cooking 5-7 minutes on each side until browned.
- Transfer browned meatballs to a baking dish and bake for an additional 10-15 minutes until cooked through (internal temperature should reach 165°F/75°C).
- Prepare your serving area by warming pita bread or washing lettuce leaves.
- Once meatballs are done, let them rest for a few minutes. Serve in pita or lettuce wraps, drizzled with tzatziki sauce and garnished with optional vegetables.
