  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt

  • 1 large egg

  • 1 cup tzatziki sauce (for serving)
  • Pita bread or lettuce wraps (for serving)

Instructions

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, and grated Parmesan cheese. Use your hands to mix evenly.
  2. Add the finely chopped parsley, minced garlic, dried oregano, dried thyme, salt, and black pepper. Mix until well combined.
  3. Crack the egg into the mixture and mix again until fully incorporated. The mixture should be sticky but manageable.
  4. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  5. After chilling, take the mixture out and portion out meatballs (about 1.5 inches in diameter). Roll them tightly but not too tightly and place on a parchment-lined baking sheet.
  6. Preheat your oven to 400°F (200°C) if baking.
  7. In a large skillet, heat olive oil over medium heat. Add meatballs in batches, cooking 5-7 minutes on each side until browned.
