Instructions

  1. Clean the seafood: Peel and devein shrimp, slice calamari into rings, and ensure small fish are scaled and cleaned. Rinse under cold water and pat dry with paper towels.
  2. Place seafood in a large bowl, add a pinch of salt and a squeeze of lemon juice, and marinate for 10-15 minutes.
  3. In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Whisk until well mixed.
  4. Gradually add chilled sparkling water to the dry mixture, whisking to avoid lumps. Adjust consistency with more water if needed.
  5. Let the batter rest for 10 minutes.
