- 2 large eggs
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- Vegetable oil, for frying
- Extra powdered sugar, for dusting
Instructions
- In a medium mixing bowl, add the softened cream cheese. Ensure it’s at room temperature for easy mixing.
- Using a hand mixer or a whisk, beat the cream cheese until smooth and creamy.
- Gradually add the powdered sugar, mixing well after each addition until fully incorporated.
- Stir in the vanilla extract, mixing until everything is well combined.
- Gently fold in the sliced strawberries, ensuring they are evenly distributed throughout the cream cheese mixture.
- Take a slice of bread and spread a generous amount of the strawberry cheesecake filling on one side.
- Top with another slice of bread to create a sandwich. Press down gently to ensure it holds together.
- Repeat this process for the remaining slices of bread and filling until you have four sandwiches.
- For extra security, you can trim the crusts off the sandwiches if you prefer a neater look, but it’s optional!
- In a shallow dish, add the all-purpose flour and season it with a pinch of salt.
- In another shallow bowl, crack the two large eggs and whisk them until well beaten.
- In a third shallow dish, pour in the breadcrumbs. If using cinnamon, mix it in with the breadcrumbs for an extra flavor boost.
- In a large skillet or frying pan, pour enough vegetable oil to cover the bottom of the pan by about 1/2 inch. Heat the oil over medium heat until hot but not smoking. Test the oil by dropping a small piece of bread in; if it sizzles, you’re good to go!
- While the oil is heating, take one sandwich and carefully dip it into the flour, coating both sides. Shake off any excess flour.
- Next, dip the floured sandwich into the beaten eggs, ensuring it’s fully coated.
- Finally, press the sandwich into the breadcrumbs, making sure to cover both sides completely.
- Once the oil is hot, gently place the breaded sandwich into the skillet. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
- Using a spatula, carefully flip the sandwich to cook the other side. Be gentle to avoid any spillage of the filling!
- Once both sides are golden brown, remove the sandwich from the skillet and place it on a plate lined with paper towels to absorb any excess oil.
- Repeat the frying process with the remaining sandwiches, adding more oil to the pan as needed.
- Dust the fried sandwiches with extra powdered sugar before serving.
