  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • Vegetable oil, for frying
  • Extra powdered sugar, for dusting

Instructions

  1. In a medium mixing bowl, add the softened cream cheese. Ensure it’s at room temperature for easy mixing.
  2. Using a hand mixer or a whisk, beat the cream cheese until smooth and creamy.
  3. Gradually add the powdered sugar, mixing well after each addition until fully incorporated.
  4. Stir in the vanilla extract, mixing until everything is well combined.
  5. Gently fold in the sliced strawberries, ensuring they are evenly distributed throughout the cream cheese mixture.
  6. Take a slice of bread and spread a generous amount of the strawberry cheesecake filling on one side.
  7. Top with another slice of bread to create a sandwich. Press down gently to ensure it holds together.
  8. Repeat this process for the remaining slices of bread and filling until you have four sandwiches.
  9. For extra security, you can trim the crusts off the sandwiches if you prefer a neater look, but it’s optional!
  10. In a shallow dish, add the all-purpose flour and season it with a pinch of salt.
  11. In another shallow bowl, crack the two large eggs and whisk them until well beaten.
  12. In a third shallow dish, pour in the breadcrumbs. If using cinnamon, mix it in with the breadcrumbs for an extra flavor boost.
  13. In a large skillet or frying pan, pour enough vegetable oil to cover the bottom of the pan by about 1/2 inch. Heat the oil over medium heat until hot but not smoking. Test the oil by dropping a small piece of bread in; if it sizzles, you’re good to go!
