  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup breadcrumbs (panko for extra crunch)
  • Vegetable oil (for frying)
  • Fresh parsley (for garnish, optional)
  • Lemon wedges (for serving, optional)

Instructions

  1. Clean the mushrooms using a damp paper towel to wipe off dirt. Avoid rinsing under water. Slice the mushrooms into even pieces, about 1/4 inch thick, and set aside.
  2. In a shallow dish, mix the flour, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, whisk the eggs. In a third dish, place the breadcrumbs.
  3. Dip each mushroom slice into the flour mixture, then into the egg wash, and finally roll in the breadcrumbs. Place the breaded mushrooms on a plate and let them sit for about 10 minutes.
  4. Heat vegetable oil in a large skillet over medium-high heat. Test the oil by dropping in a small piece of bread; if it sizzles, it’s ready. Fry the mushrooms in batches for 2-3 minutes on each side until golden brown. Use a slotted spoon to transfer them to a plate lined with paper towels.
  5. Sprinkle with extra salt while hot, garnish with fresh parsley, and serve warm with lemon wedges on the side.
