  • 2 tablespoons White Sugar
  • 2 ounces Coconut Cream
  • 1 ounce Lime Juice
  • Soda Water
  • Crushed Ice
  • Lime slice for garnish
  • Sprig of Mint for garnish
  • Shredded Coconut for garnish (optional)

Instructions

  1. In a sturdy glass or cocktail shaker, add a handful of fresh mint leaves. Using a muddler or the back of a spoon, gently press the mint to release its oils.
  2. Sprinkle 2 tablespoons of white sugar over the muddled mint. Add a splash of lime juice (about half a lime's worth) to help dissolve the sugar.
  3. Pour in about 2 ounces of coconut cream. Stir gently to combine the mint, sugar, and coconut cream together until the sugar starts to dissolve.
  4. Squeeze in another ounce of fresh lime juice to enhance the citrus flavor. Mix everything together again.
  5. Add crushed ice to the glass, filling it about three-quarters full.
  6. Pour soda water over the ice until the glass is full. Stir gently to combine all the ingredients without losing too much fizz.
  7. For a festive touch, garnish with a sprig of mint and a slice of lime on the rim of the glass. Optionally, add a sprinkle of shredded coconut on top.
