Embark on a culinary adventure with this Easy Thai Curry Coconut Ravioli Soup, a delightful fusion of Thai flavors and creamy coconut. This warming soup is easy to prepare and filled with mouthwatering surprises that will impress your family and friends.

Ingredients

Scale
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 200 grams thinly sliced beef
  • 300 grams ravioli (coconut-flavored or vegetable)
  • Bell peppers (chopped)
  • Mushrooms (chopped)
  • Bok choy (chopped)
  • 3 cups vegetable broth
  • Fresh Thai basil
  • Fresh cilantro
  • Salt (to taste)
  • Lime juice (to taste)
  • 1 tablespoon oil

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat.
  2. Add 2 tablespoons of red curry paste and sauté for 2 minutes until fragrant.
  3. Pour in one can of coconut milk and stir well to combine with the curry paste.
  4. Gradually whisk in 3 cups of vegetable broth, bringing the mixture to a gentle simmer.
  5. Thinly slice about 200 grams of beef and add it to the simmering broth. Let it cook for 5-7 minutes until it’s just cooked through.
  6. Toss in your chopped vegetables of choice, such as bell peppers and mushrooms, and simmer for an additional 5 minutes until they are tender but still vibrant.
  7. Gently add your ravioli (about 300 grams) to the pot. They should cook in the broth for about 3-5 minutes, or until they float to the surface.
  8. Remove the pot from heat and stir in a handful of fresh Thai basil and cilantro. Adjust the seasoning, adding salt or lime juice to taste.
  9. Ladle the soup into bowls, garnishing with additional herbs and a slice of lime for a zesty kick.
