  • 1 cup diced onion
  • 2 cloves minced garlic
  • 1 cup peas
  • 1 cup carrots
  • 1 cup beef broth
  • Salt
  • Pepper
  • Thyme (optional)
  • Rosemary (optional)
  • Mashed potatoes (homemade or store-bought)
  • Shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, brown 1 pound of ground beef, stirring frequently until fully cooked.
  3. Add 1 cup of diced onion and 2 cloves of minced garlic to the skillet and cook until the onion becomes translucent, about 3-4 minutes.
  4. Stir in 1 cup of peas and carrots (or your choice of veggies) and cook for a few minutes.
  5. Pour in 1 cup of beef broth and season with salt, pepper, and any herbs you like. Let it simmer for about 5 minutes until slightly thickened.
  6. While the meat mixture is simmering, prepare your mashed potatoes according to your preference.
  7. In a muffin tin, spoon the meat mixture into the bottom of each cup, filling them about halfway.
  8. Top with a generous dollop of mashed potatoes, smoothing them out with the back of a spoon.
  9. If using cheese, sprinkle some shredded cheddar on top of the mashed potatoes.
  10. Place the muffin tin in the oven and bake for about 20-25 minutes, or until the tops are golden brown and the filling is bubbling.
  11. Once done, let the mini shepherd’s pies cool for a few minutes before carefully removing them from the muffin tin. Serve warm and enjoy!
