Ingredients

  • 2 cups fresh spinach leaves
  • 1 cup kale, stems removed
  • 1 medium cucumber, peeled and chopped
  • 2 green apples, cored and chopped
  • 1 lemon, juiced
  • 1-inch piece of ginger, peeled
  • 12 tablespoons honey or agave syrup (optional, for sweetness)
  • 2 cups cold water or coconut water
  • Ice cubes (optional)

Instructions

  1. Thoroughly wash the spinach and kale under cold running water. Soak them in a bowl of water for a few minutes, then rinse again.
  2. Peel the cucumber and chop it into smaller pieces.
  3. Cut the green apples in half, remove the core, and chop them into smaller chunks.
  4. Cut the lemon in half and extract the juice, removing any seeds.
  5. Use a vegetable peeler or the edge of a spoon to peel the ginger, then slice it into smaller pieces.
  6. In a high-speed blender, add the washed spinach, kale, chopped cucumber, apple chunks, lemon juice, and ginger. Add honey or agave syrup if desired.
  7. Pour in the cold water or coconut water.
  8. Blend on high speed for about 30-60 seconds until smooth. Add more water if it’s too thick.
  9. Adjust the consistency by adding more water if needed and blend again.
  10. For a smoother juice, strain using a fine mesh sieve or cheesecloth.
  11. Discard the leftover pulp or save it for smoothies or baking.
  12. Add ice cubes or chill the juice in the refrigerator for about 30 minutes before serving.
  13. Garnish with a slice of lemon or a sprig of mint for presentation.
  14. Pour into glasses and enjoy immediately for the best flavor and nutritional benefits.
