- 2 cups fresh spinach leaves
- 1 cup kale, stems removed
- 1 medium cucumber, peeled and chopped
- 2 green apples, cored and chopped
- 1 lemon, juiced
- 1-inch piece of ginger, peeled
- 1–2 tablespoons honey or agave syrup (optional, for sweetness)
- 2 cups cold water or coconut water
- Ice cubes (optional)
Instructions
- Thoroughly wash the spinach and kale under cold running water. Soak them in a bowl of water for a few minutes, then rinse again.
- Peel the cucumber and chop it into smaller pieces.
- Cut the green apples in half, remove the core, and chop them into smaller chunks.
- Cut the lemon in half and extract the juice, removing any seeds.
- Use a vegetable peeler or the edge of a spoon to peel the ginger, then slice it into smaller pieces.
- In a high-speed blender, add the washed spinach, kale, chopped cucumber, apple chunks, lemon juice, and ginger. Add honey or agave syrup if desired.
- Pour in the cold water or coconut water.
- Blend on high speed for about 30-60 seconds until smooth. Add more water if it’s too thick.
- Adjust the consistency by adding more water if needed and blend again.
- For a smoother juice, strain using a fine mesh sieve or cheesecloth.
- Discard the leftover pulp or save it for smoothies or baking.
- Add ice cubes or chill the juice in the refrigerator for about 30 minutes before serving.
- Garnish with a slice of lemon or a sprig of mint for presentation.
- Pour into glasses and enjoy immediately for the best flavor and nutritional benefits.
