Instructions
- In a large mixing bowl, combine 1 pound of ground turkey with 1/4 cup of breadcrumbs, 2 tablespoons of finely chopped green onions, 2 tablespoons of chopped cilantro, 2 minced garlic cloves, 1 tablespoon of grated ginger, 2 tablespoons of soy sauce, 1 tablespoon of lime juice, 1 teaspoon of sesame oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix gently until just combined; overmixing can lead to tough burgers.
- Divide the mixture into four equal portions and shape each portion into a uniform patty, about 3/4 inch thick.
- Preheat your grill or skillet over medium-high heat, lightly oiling the surface to prevent sticking.
- Place the patties on the grill or skillet and cook for 5 to 6 minutes per side, until golden brown and the internal temperature reaches 165°F.
- Meanwhile, in a separate bowl, whisk together 1/3 cup of creamy peanut butter, 1 tablespoon of soy sauce, 1 tablespoon of lime juice, 1 tablespoon of honey, and 1 teaspoon of optional sriracha. Gradually add in 2 to 3 tablespoons of warm water to reach a smooth, pourable consistency.
- Take your toasted burger buns and spread a generous portion of the peanut sauce on the bottom half of each bun. Place a turkey patty on each bun, drizzle with additional sauce, and top with 1 cup of shredded carrots, 1 cup of thinly sliced cucumber, 1/2 cup of fresh cilantro leaves, and 1/2 of a thinly sliced red onion.
