Ingredients
- White bread or pain de mie (or whole grain/gluten-free bread)
- Goat cheese (chèvre)
- Pesto (homemade or store-bought)
- Beef ham
- Unsalted butter (or vegan butter/olive oil)
- Eggs (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Take slices of your chosen bread and lay them out on a clean surface. Spread a thin layer of butter on one side of each slice.
- On the non-buttered side of half the slices, spread a generous layer of pesto.
- On top of the pesto, crumble or spread the goat cheese, and then layer on the beef ham. Top it off with more goat cheese for extra creaminess.
- Place another slice of bread on top, buttered side facing out. Press down gently to help the layers stick together.
- Heat a skillet over medium heat. Once hot, add the assembled sandwich and cook for about 3-4 minutes on each side, or until golden brown and crispy.
- After toasting in the skillet, transfer the sandwiches to the preheated oven and bake for an additional 5-7 minutes.
- Once done, remove from the oven and let cool for a minute. If desired, top with a fried or poached egg before serving.
