- 1 pound of ground beef
- 1/2 cup of diced bell peppers
- 1 cup of fresh spinach
- 1 can of rinsed black beans
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 1 cup of shredded cheddar cheese
- Oil for frying
Instructions
- In a large skillet, heat a tablespoon of oil over medium heat. Add one pound of ground beef and cook until browned. Drain any excess fat.
- Stir in half a cup of diced bell peppers, one cup of fresh spinach, and one can of rinsed black beans. Cook for about 3-5 minutes until the vegetables are tender.
- Add one teaspoon of cumin, one teaspoon of chili powder, and salt and pepper to taste. Mix in one cup of shredded cheddar cheese until melted and well combined.
- Lay an eggroll wrapper on a clean surface, with a corner pointing towards you. Place about two tablespoons of the filling near the corner. Fold the corner over the filling, then fold in the sides and roll tightly. Seal the edge with a bit of water.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the eggrolls in batches until golden brown, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.
