Bol Boeuf Poivron Riz is a vibrant and hearty dish that combines tender beef, colorful bell peppers, and aromatic rice. This comforting meal is perfect for any occasion and is sure to impress with its delightful flavors.
Ingredients
- Diced beef chuck (or beef sirloin)
- Red bell pepper
- Green bell pepper
- Yellow bell pepper (optional)
- Orange bell pepper (optional)
- Jasmine rice (or basmati rice, or brown rice)
- Yellow onion
- Fresh garlic
- Beef broth (or vegetable broth)
- Paprika
- Black pepper
- Cumin
- Apple cider vinegar (or lemon juice)
- Salt
- Oil (for cooking)
Instructions
- Start by chopping the onions, garlic, and bell peppers. Cut the beef into bite-sized pieces and season with salt and pepper.
- In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the beef in batches to avoid overcrowding. Cook until browned on all sides, about 5-7 minutes. Remove the beef and set it aside.
- In the same pot, add a bit more oil if needed, then toss in the chopped onions and garlic. Sauté until the onions are translucent, about 3-4 minutes.
- Stir in the diced bell peppers and cook for another 5 minutes until they start to soften.
- Sprinkle in the paprika, cumin, and black pepper. Stir well to combine and let the spices toast for about a minute.
- Return the browned beef to the pot. Pour in the beef broth and bring the mixture to a gentle simmer.
- While the beef simmers, rinse the rice under cold water until the water runs clear. Add the rinsed rice to the pot, stirring to combine it with the beef and vegetables.
- Cover the pot and reduce the heat to low. Let it simmer for about 20-25 minutes or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.
- Once cooked, taste and adjust the seasoning if necessary. A sprinkle of fresh herbs like parsley can add a nice touch at this stage.
- Fluff the rice gently with a fork before serving. Plate it hot, garnished with fresh herbs and a squeeze of lemon juice for brightness.
