- 1/2 cup milk
- Vegetable oil, for frying
- Fresh herbs (like parsley or dill), for garnish
Instructions
- Crumble the feta cheese into a medium-sized bowl using your hands for better control. Season with a pinch of salt and pepper, then add garlic powder and paprika. Mix well to infuse flavor.
- Arrange three shallow bowls: one with all-purpose flour, one with milk, and one with breadcrumbs. Optionally, season the breadcrumbs with salt, pepper, and paprika.
- Take about a tablespoon of the seasoned feta and form it into a small patty. Repeat until all feta is shaped into patties.
- Dip each patty into the flour, then into the milk, and finally coat it in breadcrumbs, pressing gently to ensure they stick. Place the breaded patties on a plate.
- In a large skillet, heat enough vegetable oil to cover the bottom by about 1/4 inch over medium heat. Test the oil with a small piece of bread; if it sizzles, it’s ready. Fry the patties in batches for 2-3 minutes on each side until golden brown and crispy. Remove and place on paper towels to drain excess oil.
- In a separate non-stick skillet, heat a little oil over medium-low heat. Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and pepper. Cook for 3-4 minutes until the whites are set and yolks are runny, or cover for a minute for firmer yolks.
- On a plate, place a couple of crispy feta patties. Top each with a fried egg, allowing the runny yolk to create a delicious sauce. Garnish with fresh herbs like parsley or dill.
