- Beef chorizo
- Heavy cream

Instructions
- Start by peeling and cutting the potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook until they are fork-tender, about 15-20 minutes.
- While the potatoes are boiling, heat a skillet over medium heat. Add sliced beef chorizo and cook until browned and crispy, about 5-7 minutes. Remove from the skillet and set aside, leaving the fat in the pan.
- In the same skillet, add diced onion and minced garlic to the rendered fat. Sauté until translucent and fragrant, about 3-4 minutes.
- Lower the heat and pour in the heavy cream, stirring to combine. Let it simmer gently for about 5 minutes, then add the cooked chorizo back into the skillet. Season with salt, pepper, and your choice of fresh herbs.
- Season the cod fillets with salt and pepper. In a separate pan, heat a little oil over medium-high heat. Cook the cod for about 3-4 minutes per side, or until the fish flakes easily with a fork. Transfer the cod to the skillet with the cream sauce.
- Once the potatoes are cooked, drain them and return them to the pot. Add a splash of milk, a knob of butter, salt, and pepper. Mash until smooth and creamy.
- On each plate, place a generous dollop of the potato mash and top it with a cod fillet. Spoon the creamy beef chorizo sauce over the fish and garnish with fresh herbs.
