- 1 package of puff pastry (2 sheets), thawed
- 1 wheel of Brie cheese (about 8 ounces)
- 1 cup of fresh or frozen cranberries
- 1/2 cup of sugar
- 1/4 cup of water
- 1 tablespoon of orange juice
- 1 teaspoon of orange zest
- 1 egg, beaten (for egg wash)
- Fresh rosemary or thyme for garnish (optional)
Instructions
- In a medium saucepan, combine the cranberries, sugar, water, orange juice, and orange zest.
- Bring the mixture to a boil over medium heat, stirring occasionally. You’ll hear the cranberries start to pop, which is a good sign!
- Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes, or until the cranberries have burst and the sauce has thickened slightly. Stir occasionally to prevent sticking.
- Remove the saucepan from heat and let the cranberry sauce cool. It will thicken more as it cools. You can make this ahead of time and store it in the fridge until you’re ready to assemble your bites.
- Preheat your oven to 400°F (200°C).
- On a lightly floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thick.
- Using a sharp knife or a pizza cutter, cut the pastry into squares, aiming for about 3×3 inches.
- Grease a mini muffin tin with a little butter or non-stick spray.
- Gently press each square of puff pastry into the muffin tin, pushing it down into the bottom and up the sides to create a little cup.
- Cut the Brie cheese into small cubes, about 1 inch in size.
- Place a cube or slice of Brie cheese into each puff pastry cup.
- Top each piece of Brie with a spoonful of the cranberry sauce, filling generously.
- Brush the edges of the puff pastry with the beaten egg for a golden finish.
- Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the pastry is golden brown and puffed up.
- Keep an eye on them towards the end of the baking time to ensure they don’t over-brown.
- Once done, remove the muffin tin from the oven and let the bites cool for a few minutes.
- Garnish each bite with a small sprig of fresh rosemary or thyme if desired.
Notes
- These bites are best served warm, right out of the oven.
- You can prepare the cranberry sauce ahead of time and store it in the fridge.
- Feel free to experiment with different herbs for garnish or add nuts for extra texture.
