This Coconut Lavender Lemonade Mocktail is a refreshing blend of zesty lemon juice, soothing lavender, and sweet coconut water, making it an elegant and easy drink for warm days or special occasions. Perfectly chilled and garnished, it’s a delightful non-alcoholic option for any gathering.

- 1 cup fresh lemon juice (about 4–6 lemons)
- 1 cup coconut water
- 1 cup water
- 1/2 cup honey or agave syrup (adjust to taste)
- 1 tablespoon dried culinary lavender
- Ice cubes
- Fresh lavender sprigs for garnish (optional)
- Fresh lemon slices for garnish (optional)
Instructions
- In a small saucepan, combine 1 cup of water and 1 tablespoon of dried culinary lavender.
- Bring the mixture to a gentle boil over medium heat, stirring occasionally to help release the lavender’s aroma.
- Once it reaches a boil, reduce the heat and let it simmer for about 5 minutes to steep the lavender.
- After 5 minutes, remove the saucepan from the heat and let it cool for about 10 minutes.
- Strain the lavender infusion through a fine mesh sieve into a bowl or measuring cup, discarding the lavender flowers.
- In a large pitcher, combine the freshly squeezed lemon juice and honey (or agave syrup). Stir well until the honey is fully dissolved.
- Add the coconut water to the pitcher.
- Pour in the lavender infusion and stir until well combined.
- Add 1 cup of cold water to the mixture and adjust the flavor by adding more honey or lemon juice as needed.
- Cover the pitcher with a lid or plastic wrap and refrigerate for at least 1 hour.
- Alternatively, add ice cubes directly to the pitcher to chill quickly, but be aware this may dilute the drink.
- Fill a glass with ice cubes.
- Pour the chilled Coconut Lavender Lemonade over the ice, filling the glass about three-quarters full.
- Garnish with a fresh sprig of lavender and a slice of lemon on the rim of the glass.
- Repeat for additional glasses and enjoy!

- Adjust the sweetness of the mocktail by varying the amount of honey or agave syrup.
- For a fizzy version, replace still water with sparkling water or club soda just before serving.
