- 2 sprigs fresh thyme

- 1 package puff pastry or pie crust
- 1 egg (for egg wash, optional) or milk (for vegan option)
Instructions
- Cut your chuck roast into bite-sized pieces. In a large pot, heat a tablespoon of oil over medium-high heat. Brown the beef in batches to avoid overcrowding, then remove it from the pot and set aside.
- In the same pot, add another tablespoon of oil if needed, and toss in chopped onions and diced carrots. Sauté for about 5 minutes until they start to soften. Add minced garlic and cook for an additional minute.
- Return the browned beef to the pot and sprinkle in flour, stirring to coat the meat and vegetables. This will help thicken the filling.
- Pour in the beef broth, and add fresh thyme, bay leaves, salt, and pepper. Bring to a simmer, cover, and reduce the heat to low. Let it cook for about 1.5 to 2 hours until the beef is tender, stirring occasionally.
- If the filling needs thickening, stir in some milk or cream. Remove the bay leaves and adjust seasoning to taste.
- While the filling cools slightly, preheat your oven to 400°F (200°C).
- In a baking dish, pour the beef filling, making sure it’s evenly spread. Roll out your puff pastry or pie crust and place it over the filling. Trim the edges, and cut a few slits to allow steam to escape. Crimp the edges for a nice finish.
- Brush the crust with an egg wash (or milk for a vegan option) for a golden finish. Bake for 25-30 minutes or until the crust is golden brown and flaky.
