Instructions

  1. Cut your chuck roast into bite-sized pieces. In a large pot, heat a tablespoon of oil over medium-high heat. Brown the beef in batches to avoid overcrowding, then remove it from the pot and set aside.
  2. In the same pot, add another tablespoon of oil if needed, and toss in chopped onions and diced carrots. Sauté for about 5 minutes until they start to soften. Add minced garlic and cook for an additional minute.
  3. Return the browned beef to the pot and sprinkle in flour, stirring to coat the meat and vegetables. This will help thicken the filling.
  4. Pour in the beef broth, and add fresh thyme, bay leaves, salt, and pepper. Bring to a simmer, cover, and reduce the heat to low. Let it cook for about 1.5 to 2 hours until the beef is tender, stirring occasionally.
  5. If the filling needs thickening, stir in some milk or cream. Remove the bay leaves and adjust seasoning to taste.
  6. While the filling cools slightly, preheat your oven to 400°F (200°C).
  7. In a baking dish, pour the beef filling, making sure it’s evenly spread. Roll out your puff pastry or pie crust and place it over the filling. Trim the edges, and cut a few slits to allow steam to escape. Crimp the edges for a nice finish.
