  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. In a medium bowl, combine the fresh lime juice, olive oil, chopped cilantro, minced garlic, ground cumin, chili powder, salt, black pepper, and red pepper flakes (if using). Whisk everything together until well combined.
  2. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
  3. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 30 minutes, but for best results, let it marinate for 2-4 hours. If you have time, marinating overnight is even better!
  4. If grilling, preheat your grill to medium-high heat (about 375°F to 400°F). Make sure the grates are clean and lightly oiled to prevent sticking.
  5. If baking, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  6. Remove the chicken from the marinade, allowing any excess marinade to drip off. Discard the leftover marinade.
  7. If grilling, place the chicken breasts on the grill. Cook for about 6-7 minutes on one side without moving them, allowing nice grill marks to form.
  8. Flip the chicken and cook for another 6-7 minutes on the other side, or until the internal temperature reaches 165°F (75°C). Use a meat thermometer for accuracy.
  9. If baking, place the marinated chicken breasts on the prepared baking sheet. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C). You can also broil for the last 2-3 minutes to get a nice golden color on top.
  10. Transfer the cooked chicken to a cutting board or plate and cover it loosely with aluminum foil.
  11. Let it rest for about 5-10 minutes. This allows the juices to redistribute throughout the chicken.
