- 2 Cornish hens (about 1.5 pounds each)
- 1 cup apple cider
- 1/4 cup pure maple syrup
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- Salt and pepper, to taste
- 1 lemon, cut into wedges
- 1 onion, quartered
- 1 cup chicken broth
- Fresh parsley, for garnish (optional)
Instructions
- In a medium bowl, combine the apple cider, maple syrup, olive oil, minced garlic, chopped rosemary, and thyme. Whisk together until well blended. Season with salt and pepper to taste.
- Place the Cornish hens in a large resealable plastic bag or a shallow dish. Pour the marinade over the hens, ensuring they are well coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 2 hours, preferably overnight.
- Preheat your oven to 375°F (190°C). Prepare your vegetables by cutting the lemon into wedges and quartering the onion.
- Remove the hens from the refrigerator, letting any excess marinade drip off. Discard the marinade.
- In a large roasting pan, arrange the quartered onion and lemon wedges at the bottom. Place the Cornish hens on top, breast side up, tucking the wing tips under.
- Pour the chicken broth into the bottom of the roasting pan. Drizzle a little olive oil over the hens and season with additional salt and pepper.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste the hens with pan juices halfway through roasting.
- Once done, remove from the oven and let rest for 10-15 minutes. Prepare a simple gravy if desired by straining the pan juices and thickening with cornstarch slurry.
- Carve the hens and arrange on a serving platter, drizzling with pan juices or gravy. Garnish with fresh parsley.
- Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh green salad.
