- 1 cup creamy peanut butter
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil (optional)

Instructions
- Peel the ripe bananas. The riper they are, the sweeter and more flavorful your bites will be.
- Slice the bananas into 1/2-inch thick rounds for uniformity.
- Place the banana slices on a plate or cutting board lined with parchment paper.
- In a medium-sized mixing bowl, add the creamy peanut butter. Optionally, mix in a tablespoon of honey or maple syrup for extra sweetness.
- Stir the peanut butter until smooth and creamy. If too thick, microwave for 10-15 seconds to soften.
- Spread a generous amount of peanut butter on each banana slice, creating little peanut butter sandwiches. Place them back on the parchment-lined plate.
- In a microwave-safe bowl, add the dark chocolate chips and coconut oil (if using).
- Microwave in 30-second intervals, stirring in between, until melted and smooth (about 1-2 minutes).
- Let the melted chocolate cool for a minute to prevent cooking the bananas.
- Dip each peanut butter banana sandwich into the melted chocolate, using a fork to lift it out and allow excess chocolate to drip off.
- Place the chocolate-coated banana bites back on the parchment paper. Optionally, sprinkle granola on top before the chocolate sets.
- Repeat for all banana bites, drizzling any leftover chocolate over them for decoration.
- Chill the coated banana bites in the refrigerator for at least 30 minutes, or until the chocolate hardens. Alternatively, freeze for 15-20 minutes, watching to prevent them from freezing too hard.
- Once set, remove the bites from the refrigerator or freezer. If using, the sea salt adds a delightful contrast to the sweetness.
- Carefully peel the bites off the parchment paper and arrange them on a serving platter. Store in an airtight container in the refrigerator for up to a week.
