- 200g spaghetti or linguine
- 300g large prawns, peeled and deveined
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1–2 red chilies, finely chopped
- 1 teaspoon red pepper flakes (optional)
- 1/2 cup cherry tomatoes, halved
- 1/2 cup white wine (or vegetable broth)
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions
- Fill a large pot with water and bring it to a rolling boil. Add a generous pinch of salt.
- Add the spaghetti or linguine to the boiling water. Cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally.
- Before draining, reserve about 1 cup of the pasta cooking water.
- Drain the pasta in a colander and set aside without rinsing.
- Season the prawns lightly with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the prawns in a single layer. Cook for 2-3 minutes until pink and opaque, then flip and cook for another 1-2 minutes. Remove and set aside.
- In the same skillet, add the remaining olive oil. Lower the heat to medium, add garlic and chilies, and sauté for 1-2 minutes until fragrant.
- Add halved cherry tomatoes and cook for 2-3 minutes until softened.
- Pour in white wine (or broth) and scrape the skillet to release flavorful bits. Simmer for 3-4 minutes until reduced.
- Stir in lemon juice and adjust seasoning with salt and pepper.
- Add the cooked prawns back into the skillet, tossing to coat in the sauce.
- Add the drained pasta, tossing everything together. If dry, add reserved pasta water gradually until desired consistency is reached.
- Remove from heat and sprinkle with chopped parsley. Toss to combine.
- Serve immediately, twirling pasta onto plates for presentation.
- Optionally, sprinkle with grated Parmesan cheese.
