  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 slices of your favorite bread (sourdough, whole grain, or white)
  • 2 tablespoons butter, softened
  • 1 cup fresh spinach or lettuce (optional)
  • Tomato slices (optional)
  • Pickles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness of about 1 inch and season with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown.
  4. Transfer the skillet to the oven and bake the chicken for 15-20 minutes or until the internal temperature reaches 165°F (75°C).
  5. In a medium bowl, mix together cream cheese, mayonnaise, Dijon mustard, cheddar, and mozzarella until well combined.
  6. Once the chicken is done, let it rest for 5 minutes, then slice it into strips or cubes and fold it into the cheese mixture.
  7. Butter one side of each slice of bread. On the unbuttered side of one slice, spread the cheesy chicken mixture evenly.
  8. Add spinach or lettuce, tomato slices, and pickles if desired, then top with another slice of bread, buttered side facing out.
  9. Heat the skillet over medium heat and place the sandwich in the skillet. Cook for 3-4 minutes on one side until golden brown.
  10. Flip the sandwich and cook for another 3-4 minutes until both sides are crispy and the cheese is melted.
  11. Remove from the skillet, let cool for a minute, slice in half, and serve warm.
