- 2 boneless, skinless chicken breasts
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese, softened
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 slices of your favorite bread (sourdough, whole grain, or white)
- 2 tablespoons butter, softened
- 1 cup fresh spinach or lettuce (optional)
- Tomato slices (optional)
- Pickles (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness of about 1 inch and season with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a large oven-safe skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake the chicken for 15-20 minutes or until the internal temperature reaches 165°F (75°C).
- In a medium bowl, mix together cream cheese, mayonnaise, Dijon mustard, cheddar, and mozzarella until well combined.
- Once the chicken is done, let it rest for 5 minutes, then slice it into strips or cubes and fold it into the cheese mixture.
- Butter one side of each slice of bread. On the unbuttered side of one slice, spread the cheesy chicken mixture evenly.
- Add spinach or lettuce, tomato slices, and pickles if desired, then top with another slice of bread, buttered side facing out.
- Heat the skillet over medium heat and place the sandwich in the skillet. Cook for 3-4 minutes on one side until golden brown.
- Flip the sandwich and cook for another 3-4 minutes until both sides are crispy and the cheese is melted.
- Remove from the skillet, let cool for a minute, slice in half, and serve warm.
